Top Chef champion Chef Jeremy Ford and Grove Bay Hospitality team up again with Celano
Design Studio to bring the Art Deco South Beach attitude to Las Vegas with Stubborn Seed.
Originally from Miami Beach’s coveted South of Fifth neighborhood, the Michelin-starred
Stubborn Seed has its second location in the Resorts World Las Vegas with Chef’s signature
tasting menu and cocktails.

Project Description:
Stubborn Seed’s 4,500 sqft (6,300 Total sqft with kitchen) Resorts World Las Vegas location
features a bar, bar lounge area, expansive main dining room and a covered outdoor patio dining
area. Upon arrival guests are greeted with a plaster finish façade and arched décor elements
reminiscent of the Art Deco influences from Stubborn Seed’s South Beach Miami roots. Partial
height linear textured glass screens with lush, green foliage provide glimpses into the energy of
the bar lounge and the iconic window view into the kitchen where Chef Jeremy Ford can be
previewed in his element.

The curved bar features a scalloped red tile bar front and concrete top with black lacquer and
brushed brass metal mesh back bar shelving. A large circular glass and cold rolled steel custom
chandelier hovers above the bar: an ode to the racetrack shape chandelier of the restaurant’s
Miami location. The bar lounge seating is draped in whiskey and charcoal leathers with linear
stitching inspired by the craftmanship of motorcycle saddles.

Taking inspiration from the automotive finishes of motorcycles and intricate arch details from Art
Deco architecture, brushed brass and polished deep red metal arches delineate the bar lounge
space from the main dining area. Follow the walnut wood parquet flooring and step into the main
dining area where a large hand painted mural floats above the window view into the kitchen like
a frame. This hand painted mural continues inside the kitchen wall as a backdrop to the kitchen
main stage, giving guests Stubborn Seed’s signature intimate dining experience with a view to
Chef Jeremy Ford at his craft. The main dining area is rugged yet refined, with red leather curved
banquettes, table top patterns made of a stained black wood plank inlay and a rich walnut wood
coffered ceiling layered with ribbed glass tiered chandeliers.

The private dining room is the place to see and be seen with a custom stone pattern flooring
made up of white and grey stones, a curved ceiling with antique mirror inlay and a large frosted
glass domed chandelier. While seated in a diamond stitched leather chair at the private dining,
guests can enjoy the restaurant’s wine collection. The custom wine room enclosed in glass can
also be viewed from the bar lounge.

Across the bar lounge is the outdoor patio dining oasis with full height outdoor views. A mixture
of custom glass pendants, sculptural metal mesh pendants, and hanging plants adorn the ceiling
above the caramel leather linear tufted banquettes and plush green velvet dining chairs to bring
the outdoors in while enjoying the tastings of Stubborn Seed’s farm to plate experience.
