Salt + Ash by Jeremy Ford – Hawks Cay Resort

Concept Description:

NYC-based Celano Design Studio has collaborated once again with Brookfield Properties and the Florida native, Top Chef and Michelin Star awarded Chef Jeremy Ford in creating a dining getaway along the Florida Keys. Nestled within the ocean surroundings of the Hawks Cay Resort is Salt + Ash, a 140-seat restaurant with the bold flavors of the land, sea and fire in an elevated farm-to-table dining experience.

Project Description:

Celano Design Studio celebrates the unique octagon interior structure of this 4,000 square foot Brookfield Property space with a modern beach house feel, exposed white washed wood beams, and a central 15 globe chandelier in hand-crafted Capiz shells.

Setting the Salt + Ash stage for Chef Jeremy Ford’s creations is a wood fire oven centered between two arches clad in white washed wood shelving, where guests can enjoy handcrafted cocktails at the stone bar or enjoy the local offerings of the islands at the raw bar on custom brass metal barstools.

Above the oven is a large scale original artwork by AgenCe, a black sketch drawing mural on white and seafoam green tiles. The mural features fruit and seasonal vegetables that are actual ingredients infused in Chef’s dishes and grown on his Florida farm.

The glow of warmly lit mother of pearl shell lines the walls’ inset walnut wood arches, creating an intimate dining experience. Custom half round banquettes in warm, white sand upholstery offers views of Chef at work while offering a sense of privacy with a teak wood, round dowel detailed back. Light blues and green with a hint of coral pink upholstery in this 90-seat interior speak the language of the food – where ocean and farm collide.

Stay close to the ocean with counter height seating along the full height window views or have an outdoor dinner on the 40-seat covered patio with half a dozen fresh oysters, beverage in hand and the salt breeze in your hair.
